Soy milk chocolate muffins [Vegan]

Ingredients: Soy milk 260g, canola oil 60g, lemon juice 1Ts, sugar 110g, a pinch of salt, flour 240g, cocoa powder 30g, starch 1Ts, b.p. 1ts, baking soda 1/4ts, 1 cup of chocolate chips of your choice.

Changes: used brown sugar, substituted canola oil with grapeseed oil, eliminated salt, used black bean/black sesame soy milk, used a bar of chopped dark chocolate.

(Makes about eight 5cm muffins)

0. Preheat the oven to 180 degrees Celsius. Sift flour, cocoa powder, starch, b.p. and baking soda altogether and set aside.
1. In a medium sized bowl, mix soy milk, oil, lemon juice, sugar and salt together thoroughly.
2. Mix in sifted powder and chocolate chips until none of the dry powder is present.
3. Pour the batter into the muffin pan (70-80% full) and bake for 20 minutes.
4. Seal the muffins into individual packaging as soon as the muffins are cooled enough, to prevent drying.
