Coconut oat goji berry cookies [Vegan]

Ingredients: Whole wheat flour 1 cup, large rolled oats 1 & 1/2 cup, b.p. 1/2 ts, baking powder 1/2 ts, salt 1/3 ts, cinnamon powder 1 Ts, flax seeds 2 Ts, dried goji berries 1/2 cup, desiccated coconut (unsweetened) 1/2 cup, honey 1/2 cup, coconut oil 1/2 cup, 1 egg (beaten with 1 Ts water), vanilla extract 1 ts

Changes: Used plain flour, ground flax seeds, used brown sugar instead of honey (yields richer/sweeter cookies), used grapeseed oil instead of coconut oil.

(Makes about 20+ cookies)

1. Mix together flour, oats, b.p, baking powder, salt, cinnamon, flax seeds, coconut, and goji berries. Set aside.
2. In a large bowl, mix together honey, oil, vanilla, and the beaten egg.
3. Pour in the dry ingredients and mix thoroughly.
4. Keep the batter in the fridge for 20 minutes to make it easier to deal with. 
Preheat the oven to 325 F (=162 C). Line a pan with baking sheet.
5. Take out the batter, put heaping tablespoonfuls on the pan & press lightly in the center.
6. Bake for 12-15 minutes.
