Date and almond coffee bread

Ingredients: 1 & 1/2 cups all-purpose flour, 2 Ts butter (softened), 1 cup white sugar, 1 egg, 1 ts baking soda, 1 ts vanilla extract, 1ts salt, 1 cup strong brewed coffee, 1 cup chopped & pitted dates, 1 cup chopped nuts

Changes: Used brown sugar, used chopped almonds for nuts, used dried dates preserved in honey. No salt.


* Makes one 245 x 90 x 65 mm pound cake or six-seven 5cm muffins.
* Reduce the baking time to half when baking in muffin pan.

0. Preheat oven to 170 degrees C. Grease a loaf pan & line the bottom with parchment paper (or simply use a paper mold). Prepare the nuts chopped.
1. In a small dish, put chopped dates, sprinkle the baking soda, and pour the hot cup of coffee. Set aside.
2. In a medium bowl, mix butter & sugar & egg until well-blended. Stir in vanilla extract, and mix in flour and salt.
3. Fold in nuts & the coffee mixture.
4. Pour in the batter in the pan. Pound the bottom on the floor to remove air.
5. Bake in the oven for an hour, or until the top springs back when lightly touched.
6. Cool for some time before cutting into small loaves.
